Lazy Pie

This pie is delicious as a main dish! It takes just a few minites to prepare the dough. The filling is made with beef, cabbage, spices, and it can be prepared in advance.

Dough:
3 eggs
2/3 cup all-purpose flour
1/3 cup corn starch or you can take only 1 1/8 cups of flour
14 oz sour cream or kefir
14 oz light mayonnaise
1/2 teaspoon salt
1/2 teaspoon baking soda

Filling:
You can use anything. I used fried minced beaf with cabbage (or cooked rice or fried mushrooms) with herbs (chopped dill) and spices.

2 cups cabbage, coarsely shredded
1/2 cup onions, chopped
1.2 lb beef, ground
1 tablespoon (heaping) steak seasoning (or salt and pepper)
1/4 teaspoon ground ginger (optional)
1/4 teaspoon ground coriander (optional)
1/2 cup minced dill

To make the filling: Start by frying beef and onion in a heavy skillet.

Add cabbage, salt and pepper to taste. Cook cabbage until it is tender, about 20 minutes. Add minced dill, spices. Let it cool. (You can make the filling in advance and keep it in a refregirator for a day, but it is better to warm it up a bit before use.)

To make the dough: Preheat the oven to 400F. Mix all the ingredients in a big bowl. The dough will be like a biscuit dough. Divide the dough into 2 portions. Pour a little more than the half of the mixture in a 10-inch round spring-clip baking parchment-lined cake pan.

Bake for 10 minutes. Then take out and top with filling.

Pour the remaining dough on top and spread out carefully with a spoon to for even coverage.

Return the pan to the oven and bake for about 25 minutes until the top crust is golden. Serve warm.
